      <image:title>Our Oysters - Muscongus Bay’s Finest.</image:title>
      <image:caption>Deer Landing Oyster Company strives to produce the best small-batch oysters on the market. Because our farm is small, we are able to handle each oyster with care—cleaning and tending to them each by hand. Our farm is located in Muscongus Bay, just at the mouth of the Medomak River. This location provides our oysters the benefit of strong river currents and seven to ten foot tidal ranges that bring fresh nutrients in and out of the farm continuously throughout the growing season. The cold water temperatures here in the midcoast give our oysters a longer growing period, too. That long growing period lets these filter-feeders absorb all the beautiful flavor the Gulf of Maine waters have to offer. The result is a uniquely tasty oyster. Our oysters are deep-cupped, crisp, and briney. We love ‘em—we eat them all the time! And we hope you will too.</image:caption>

      <image:caption>Jeremy comes to oystering from the food service industry—he’s worked in professional kitchens, tended bar, and previously started his own beverage company. He’s also worked on issues surrounding food sustainability; he managed a nonprofit that focused both on eliminating problems of food access and on reducing food waste in the production/distribution system. As a kid, he sterned on lobster boats, and the love of Maine’s oceans and its seafood industry never left him. Deer Landing Oyster Company is the result of a passion for oysters and decades of experience in food production and service industries.</image:caption>

The captain of F/V “Reel Catch” and owner-manager of Wallace’s Lobster Co-op, Ernie has his hand in a wide range of work, from deep-sea lobstering, to tuna fishing, scalloping, and bait fishing—among other things. Always looking to diversify, he joins Deer Landing Oyster Company with critical knowledge and skills to help make the operation run more smoothly.</image:caption>

He comes from a long line of golden retrievers, and so his contributions include sniffing, chewing things, sleeping on boots, and generally just getting in the way.
